Saskatoon Berry Recipes


SASKATOON BERRY COFFEE CAKE

Ingredients:


   2 cups flour

   1 ½ cups sugar

   2/3 cup butter

   2 teaspoons baking powder

   1 teaspoon salt

   1 cup milk

   2 eggs, separated

   1 teaspoon vanilla

   1 teaspoon lemon zest

   2 cups Saskatoon Berries

Directions:


  1. Combine flour, sugar and butter.

  2. Reserve ¾ cup of this mixture for topping – add 1 teaspoon lemon zest to topping.

  3. To remainder, add salt, baking powder, vanilla, milk and egg yolks. Blend.

  4. Beat egg whites until firm and fold into batter.

  5. Pour into a 9”X 13” baking pan.

  6. Sprinkle with Saskatoon berries and the topping mixture.

  7. Bake at 350 degrees for 40 – 50 minutes.

RHUBARB – SASKATOON JAM

Ingredients:

   6 cups rhubarb

   4 cups Saskatoon berries

   1 small orange, finely chopped

   Juice from ½ lemon

   3 cups sugar

Directions:

  1. Combine orange, rubarb and sugar in a large stock pot.

  2. Bring to a boil, stirring constantly.

  3. Stirring occasionally, continue to boil unto thick.

  4. Add Saskatoons and lemon juice.

  5. Stirring frequently, return to a boil until thick – about 15 minutes.

  6. Pour into hot sterilized jars.

  7. Clean rims abd seal.

  8. Place in a bath of boiling water for 10 minutes. Water should cover the tops of the jars by 1 inch.
